You have some really detaitained stuff.&lt;br /&gt;&lt;br /&gt;Now here are a couple of observations I made on your process and some of the problems that you had.  &lt;br /&gt;&lt;br /&gt;1)hydromiter reading- I usually let mine sit in the sample for a while while I finish moving the beer to the fermentor.  If it's the FG reading, I let it just sit in the tube for a while floating.  After that, I look at it and make my best jugement on where I think it is.  Remember, this is a caculation that only gives you an estimate on the ABV so don't get worked up on specifics.&lt;br /&gt;&lt;br /&gt;2)two handed bottle capper- now I am currently kegging my brew, which is great, and I am a fiscally responsible brewer so I would reuse old bottles that I got from the store.  Couple of things as I remember them; make sure you are not using any screw top bottles, they can mess your operation up bad, clean and sanatize the caps just like everything else and as far as capping them, just take your time on the capping and give the bottles a little inspection before you put them away.  You can usually see if their is a cap on bad.&lt;br /&gt;&lt;br /&gt;Finally, relax.  Don't worry.
